Real Ingredients

When we say “Buttercream”, we mean it. Our true European Buttercream is made from scratch – a fourth generation
recipe that uses real butter, egg yolks, sugar and not much else. Fudge, Chocolate Parisian Whipped Cream, Bavarian
Cream, you’ll find it all made by hand here at Freed’s, and never taken out of a box.

Signature Cake Flavors

- White Cake
     Our signature white cake is both light and delicious. The perfect base for any flavor combination.


- Chocolate Cake
     Our chocolate tea cake is rich and decadent and just perfect. A bit heavier than our white cake, though still fluffy and delicious.

- Marble Cake
     Can't decide? The perfect marbleized swirl of our white and chocolate cake.

- Red Velvet Cake
     Our traditional rich red velvet cake. Deep flavor and a deep color.

- Almond Cake
     A light white cake with a lovely almond flavor. Great with raspberry, amaretto, or Nutella.

- Lemon Cake
     A light lemon cake with a flavorful citrus burst. Great with seasonal favorites like strawberry or raspberry.

- Carrot Cake
     Our classic carrot cake chock full of pecans and fresh carrot. Perfect with our signature cream cheese filling.

Icings & Frostings

- Buttercream   

Our true European buttercream is a rich and flavorful icing that uses real butter, egg yolks, sugar, and not much else. As an icing, the buttercream has a yellow tint.

- Chocolate Buttercream     
Our true European buttercream blended with our rich chocolate ganache for a chocolatey buttercream that is absolutely delectable. This icing has a light chocolate color.

- 50/50 Icing   
 A 50/50 blend of our true European buttercream and Rosette icing. Sweeter than the buttercream and not quite as rich in butter flavor, the 50/50 icing has a candlelight color.

- Chocolate Ganache   
 A rich chocolate cream that gets poured over another of our icings (we recommend the chocolate buttercream). Has a deep chocolate color and a thick glossy sheen that is absolutely gorgeous.

- Whipped Cream     
Fresh whipped cream blended with a touch of sugar. Breaks down quickly so can only be used in specific designs and cakes. Can't be tinted or decorated on (color will "bleed" into it).

- Parisian Chocolate Whipped Cream     
A belgian chocolate blended whipped cream. Light, chocolatey, and not overly sweet. Breaks down quickly so can only be used in specific designs and cakes. Can't be tinted or decorated on.

- Rosette Icing     
A classic "grocery store" style icing made from powdered sugar and shortening. A sharp sweet flavor with a bright white color. Tinted icings are generally made using rosette icing.

- Tinted Icings     
Our tinted icings are made with the above mentioned rosette icing and require dyes to get full colors. Darker, deeper, and more vibrant colors like blues, reds, purples, black, and others can cause the icing to have a bitter taste and can stain teeth, tongues, clothes etc. For that reason, we generally encourage customers to avoid more vibrant colors, though sometimes for specific designs it's the only option to achieve the look.

Signature Fillings

- Bavarian Cream
Our most popular filling, a velvety whipped vanilla filling that's quite a bit lighter than a traditional cooked custard. Not similar to the pudding style Bavarian cream some folks think of when we mention "Bavarian cream." Think vanilla ice cream in whipped form.

- Buttercream
Our true European buttercream is a rich and flavorful icing that uses real butter, egg yolks, sugar, and not much else. We use it as our signature icing but it can be used as a filling if you'd prefer as well.

- Chocolate Buttercream
Our true European buttercream blended with our rich chocolate ganache for a chocolatey buttercream that is absolutely delectable.

- Fudge Buttercream (Chocolate Royale)
Our true European buttercream blended with our gooey fudge for a rich chocolate buttercream that is absolutely decadent.

- Strawberry Buttercream
Our true European buttercream blended with a strawberry preserve. Goes great with just about anything.

- Raspberry Buttercream
Our true European buttercream blended with a raspberry preserve. Goes great with chocolate.

Specialty Fillings

- Cream Cheese Icing
Our signature cream cheese filling is made from scratch and is full of flavorful sweetness. The perfect filling for our carrot cake or red velvet.

- Whipped Cream
Fresh whipped cream blended with a touch of sugar. Breaks down quickly so can only be used in specific designs and cakes.

- Parisian Chocolate Whipped Cream
A belgian chocolate blended whipped cream. Light, chocolatey, and not overly sweet. Breaks down quickly so can only be used in specific designs and cakes.

- German Chocolate Filling
An incredible cooked custard blended with fresh coconut and chopped pecans.

- Chocolate Bavarian Cream
A velvety whipped chocolate filling that's quite a bit lighter than a traditional cooked custard. Not similar to the pudding style Bavarian cream some folks think of when we mention "Bavarian cream." Think chocolate ice cream in whipped form.

- Chocolate Fudge
Our made from scratch chocolate fudge filling is gooey, rich, and ultra chocolatey.

- Fresh Fruit
Choose from a variety of seasonal fresh fruits like strawberries, bananas, raspberries, blueberries, and anything else you can dream up. Fresh fruit can generally only be used in single tier cakes that are not for display, as the water content can seep and cause damage to the design.

- Strawberry Preserve
A sweet fresh fruit strawberry preserve that combines beautifully with white, chocolate, marble, almond, or lemon cake. Must be layered with Bavarian cream.

- Raspberry Preserve
A tart and sweet raspberry preserves that combines beautifully with white, chocolate, marble, almond, or lemon cake. Must be layered with Bavarian cream.

- Lemon Preserve
A tart and sweet lemon preserve that combines beautifully with white or lemon cake. Must be layered with Bavarian cream.

- Pineapple Preserve
A sweet pineapple preserve that combines beautifully with white or chocolate cake. Must be layered with Bavarian cream.

- Cherry Preserve
A sweet cherry fruit preserve that combines beautifully with white, chocolate, marble, or lemon cake. Must be layered with Bavarian cream.

- Mocha Buttercream
A coffee blended buttercream with a hint of chocolate.

- Mousse Filling
A light and airy mousse that can be flavored with one or more of chocolate, coffee, caramel, strawberry, raspberry, lemon, pineapple, Myers rum, Amaretto, Kirsch, Grand Marnier, Kahlua, Bailey's, Peanut Butter, Oreo, and more.
